Mid-February is about the time I reach my limit on meat and starch. And even tho local vegetables are not at their peak, we can certainly coax as much out of what we do get these days. Red’s Quality ugly-but-super-sweet carrots shine as a base and as the star of this hearty soup. We add some rich aromatics and lentils with plenty of turmeric and cumin.
