Yes, I use tagine primarily to get your attention, I don’t think braised or slow-roasted have the same appeal. Tagine can refer to the earthenware vessel AND the method: a long, slow, wet bake. Cauliflower is cooked slowly til tender with olives and lemon and cinnamon with a few potatoes for a very satisfying dish.
