I kinda regret that I missed out on the zoodle trend, but my kitchen cupboards at home are packed full of unused specialty gadgets and I am grateful to possess some decent knife skills. Putting those talents to work for this warm weather salad of raw summer squashes, sliced thin and given a lazy bath in lemon and fruity olive oil. Then we’ll toss with sweet dinosaur kale that’s been massaged with sea salt. Chopped spicy peanuts and a sumac-buttermilk drizzle to round it all out
